    Linda,

What a great idea to make this using mint chocolate ice cream! I will definitely have to try that.

And no, I didn’t know that Pittsburgh has the 2nd largest St. Patrick’s Day parade in the country! Have fun!

Well, it looks like I will be making this for St. Patrick’s Day! I’m thinking of making it with mint chocolate chip ice cream to carry out the “green for St. Patrick’s Day” theme! Yum!!!
You know Pittsburgh has the 2nd largest St. Patrick’s Day parade in the country! Congratulations on the grandbaby news and Happy (belated) Birthday! I remember 51 🙂

      Jo,

Tell your princess happy birthday for me. So glad you’ll be making this cake for her; you’re all gonna LOVE it!

Oh my! This sounds heavenly! Maybe my son being home on spring break and my high school daughter starting spring break this weekend is excuse enough to make this! Hm, I do believe it is! Thank you for sharing!

It looks yummy! I make my own low sugar ice cream cake with sugar free ice cream bars on the bottom and sugar free icecream(any flavor) layered up. I also add sugar free Carmel and sugar free hot fudge, cool whip and sugar free pie filling on top make it very festive! 🙂

      Anonymous,

What great suggestions for making this cake sugar free. Hadn’t thought about pie filling on the top; that would be fun to try!
