Ramen Noodle Slaw

Tomorrow is my 51st birthday (or so they tell me–I was actually thinking I was going to be 35), and Steve is hosting a birthday dinner for me.  He’s in charge of planning the menu but I may have to twist his arm to be sure this dish gets included in the line up.  It’s one of our all time favorite recipes and is made all the better by the fact that it can be made ahead of time.

For years and years, whenever I heard the word granola I would picture Birkenstocks, daily batches of homemade bread, charming wood stoves, and clothes hung out on a line to dry. In other words, I never considered that granola could be a part of my life because granola seemed to belong to a world that this modern, microwave mama could never aspire to.

I also had no clue what was in granola.  Bean sprouts? Crushed eggs shells? Tofu? Bird seed? Mysterious, organic, naturally grown health foods?  Exotic seeds and seasonings?  Certainly no ingredients that would ever be stocked on my non-exotic pantry shelves.

Since none of our extended family will be able to make it to Manteo for Thanksgiving, we have decided to once again host the men who live at Dare Challenge, a nearby residential substance abuse program.

Although it takes an hour to bake, you can come home from work, compile the dish, put it in oven, change clothes, check e-mail, take a walk, and put in a load of laundry.  And the next thing you know, dinner’s done.   Happy day!

During last week’s storm, we three Smiths decided it was time for some Big Time Comfort Food.  One of the most comforting foods that I know of is Chicken and Dumplings and I especially love this recipe because it’s simple and uses Bisquick for the dumplings.  That means that if you’re looking for a complicated gourmet recipe that a French chef might spend days and day preparing–well, this ain’t it!
